Vegan Mince Wellington

This one is so easy, all you have to do is put it together and pop it in the oven!

The Urban Vegan mince we are using is so well spiced already it doesn't need any additional ingredients. If you want, you can add chopped carrots, mushrooms and walnuts to it and mix it in, to add more texture.

Method:

Heat the oven to 200 degrees. Defrost the mince. Roll out the puff pastry onto a baking sheet. Shape the mince on the one end of the pastry in a long sausage shape. Fold the other side of the pastry over the mince. Tuck the overlapping pastry under the roll. Lightly score the top of the pastry with a sharp knife. Wash the top of the pastry with some dairy-free butter so that it will brown. Bake in the oven for 35-40min until the pastry is a lovely golden brown.

Serve with a mushroom gravy, buttery mash and roast veggies. Yum!
