Sun-dried Tomato Pasta
Cook the pasta as per the instructions on the packaging.
Roughly chop half of a large white onion, halve the rosa tomatoes, and cut the mushrooms into quarters (or halves if using smaller mushrooms).
Heat some oil in a pan and add the onion, cook until almost translucent.
Add the tomatoes and chopped mushrooms and cook on a low heat until the tomatoes are soft.
Add 4 tablespoons of Feel Good Food Sun-dried Tomato Pesto and a little bit of water if need be.
Add the baby spinach and cook until just wilted then turn off the heat.
Add the pasta in with your sauce and mix together.
Serve with a generous amount of grated Violife Prosociano and fresh basil leaves as garnish.
