Spicy Vegan Prawn & Pesto Pasta

Ingredients:

  • Vegelicious spicy soy prawn pieces⁠
  • Pesto Princess coriander and chilli pesto⁠
  • Violife Prosociano cheese⁠
  • cherry tomatoes⁠
  • pasta of choice⁠⁠

Method:⁠
Fry the prawn style pieces in hot oil in a pan until cooked through and browned on both sides. Add the cherry tomatoes right towards the end and let them blister ever so slightly.⁠

In the meantime, mix some pasta water with the pesto (this makes it stretch further), then stir into the cooked pasta. We like spaghetti or linguini for this dish.⁠

To serve: add your prawn pieces and tomatoes and mix together. Grate the cheese on top and season to taste.⁠

*swap the coriander and chilli pesto for basil and chilli if not a fan of coriander, or basil and lemon for a milder spice.
