Spicy Vegan Prawn & Pesto Pasta
Ingredients:
- Vegelicious spicy soy prawn pieces
- Pesto Princess coriander and chilli pesto
- Violife Prosociano cheese
- cherry tomatoes
- pasta of choice
Method:
Fry the prawn style pieces in hot oil in a pan until cooked through and browned on both sides. Add the cherry tomatoes right towards the end and let them blister ever so slightly.
In the meantime, mix some pasta water with the pesto (this makes it stretch further), then stir into the cooked pasta. We like spaghetti or linguini for this dish.
To serve: add your prawn pieces and tomatoes and mix together. Grate the cheese on top and season to taste.
*swap the coriander and chilli pesto for basil and chilli if not a fan of coriander, or basil and lemon for a milder spice.
