Chickpea Curry

A satisfying, easy to whip-up meal for any day of the week!

Ingredients (serves 4):

Method:

Heat olive oil in a pan and add the chopped onions, crushed garlic, ginger and spices and sauté until the onions are soft. Add the chickpeas, chopped tomato and coconut milk and bring to a simmer. Let it simmer for around 10 minutes for the flavours to develop. Add salt and black pepper to taste.

Serve with fluffy Goodness Me quinoa and a baby spinach salad with avo and cherry tomatoes and a delicious dollop of Pesto Princess Coriander and Chilli Pesto.
